Pumpkin Bread
While the leaves fall and harvests come in, Autumn arrives in force. Time to make some bread, and it's fine if you don't have fresh pumpkin. That's where we come in.

Time:
60-120 minutes.

Ingredients
( ) 1 1/2 cups of flour
( ) 1 cup of sugar
( ) 2 eggs
( ) 1 container Sistema Organa Dried Pumpkin
( ) 1 teaspoon of baking soda
( ) ½ teaspoon of salt
( ) ½ cup of mild Sistema Organa Olive Oil
( ) ¼ cup of water
( ) ½ teaspoon of pumpkin allspice
( ) ½ teaspoon cinnamon
( ) 1/2 teaspoon of nutmeg

***optional- you may add any kind of nuts or raisins ***
Directions
( ) Bring 3 cups of water to a boil.
( ) Add 1 container of Sistema Organa Dried Pumpkin.
( ) Let soak for 45-55 minutes to rehydrate.

( ) Meanwhile, preheat oven to 350 degrees.
( ) In a large mixing bowl, combine flour, sugar, baking soda, and salt. Sift for best results.
( ) In a small bowl, beat two eggs.

( ) Drain water and remove pumpkin.
( ) Puree pumpkin until smooth.

( ) In another mixing bowl combine pumpkin, 2 beaten eggs, olive oil, water, allspice and cinnamon.
( ) Mix lightly.
( ) A dd the wet ingredients to the dry.
( ) Stir together gently.
( ) Add any additional ingredients now, ex.nuts.
( ) Pour into a well greased loaf pan, preferably 9x5.
( ) Bake for 50-60 minutes.
( ) Let settle and serve.
